Since May, health authorities across the United States have been tracking a concerning outbreak of cyclosporiasis, an infection caused by the microscopic parasite Cyclospora cayetanensis. The outbreak has now spread to 17 states, prompting fast-food chains like Taco Bell to pull fresh ingredients such as lettuce, cilantro, and guacamole from their menus. While the CDC has confirmed 145 official cases, experts believe the actual number is likely much higher, as many people may not seek medical attention for what they assume is a routine stomach bug.

Understanding the Threat

Cyclosporiasis spreads through the fecal-oral route, meaning people contract it by ingesting food or water contaminated with fecal matter. Once inside the small intestine, the parasite triggers a range of uncomfortable symptoms: abdominal cramps, bloating, nausea, loss of appetite, explosive diarrhea, and extreme fatigue. For some, the illness resolves without treatment, but the CDC warns that untreated cases can last a month or longer, increasing the risk of severe dehydration and other complications.

This isn't the first time cyclosporiasis has made headlines. Previous outbreaks have been linked to fresh produce like basil, cilantro, lettuce, raspberries, and peas—staples in many Latino kitchens. The current outbreak has raised particular concern among communities that rely on these ingredients for daily cooking, from pico de gallo in México to ceviche in Perú and ensalada de frutas across the Caribbean.

How to Protect Yourself and Your Family

Health officials emphasize that prevention is the best defense. Thoroughly wash all fruits, vegetables, and herbs under running water before eating or cooking. Pay special attention to items with crevices where parasites can hide, like raspberries and cilantro. Scrub firm produce like carrots and cucumbers with a brush, and consider soaking leafy greens in a vinegar or saltwater solution for extra safety.

Hand hygiene is equally critical. Wash your hands with soap and water before and after using the bathroom, after changing diapers, and before handling food. Clean all cutting boards, countertops, and utensils with hot, soapy water after preparing raw produce. Avoid untreated water from streams, lakes, or wells, as it may contain the parasite.

For those who experience symptoms, staying hydrated is key. Drink plenty of clean water or oral rehydration solutions. If diarrhea persists for more than a few days, or if you notice blood in your stool, seek medical attention. Doctors can prescribe antibiotics to shorten the illness and reduce its severity.

While the CDC has not declared a national emergency, the agency urges vigilance. As summer heats up and families gather for cookouts and festivals, the risk of foodborne illness increases.
